Falling for Caprese

As I look at the blooms on my fall tomatoes, smell the inviting fragrance of my compact basil, and feel the hint of cooler weather in the evening breeze, I find myself looking forward to evenings outside in the beautiful San Antonio fall. One of my favorite fall foods for outdoor dining is a Caprese salad.

My “go to” version of this dish starts with sliced tomatoes and mozzarella cheese, sprinkled with fresh basil. I drizzle this with olive oil and balsamic vinegar and add a dash of salt and pepper.

This simple salad is incredibly versatile. It can stand alone with garlic bread for sopping as an appetizer, top a green salad for a lite lunch, or serve as a salad course for a more substantial meal. No matter the occasion, it’s perfect for sharing a relaxed fall evening with friends and family.
